Done these a few times, easy peasy, turn out brill!

4oz self raising flour

4oz caster sugar

4oz margerine

1 beaten egg

1tsp vanilla extract

Put everything in a bowl and mix like crazy until you get a pale, creamy mixture.  Spoon into cupcake cases, about two thirds up the paper case.  Bake in oven, 180 degrees, for 12 minutes then test with  skewer.  If it comes out clean they're done, otherwise leave for a minute or two longer.

Leave to cool and decorate with icing or frosting, whichever you prefer.


Remember, Ginger Rogers did everything Fred Astaire did, but backwards and in high heels.

I'm so lazy. I usually just buy the mixes that are prepackaged. You just add water and sometimes eggs and that's it. I'll have to try this recipe though as I'm sure I'll save money making the mix myself.
