Spider web rocky road triangles

Give your chocolate fridge cake a spooky Halloween twist and make these perfect party treats for October 31st.

Ingredients

  • 225g (8oz) dark chocolate, broken into pieces
  • 115g (4oz) butter
  • 397g can Carnation condensed milk
  • 275g (10oz) digestive biscuits, coarsely crushed
  • 25g (1oz) raisins 
To decorate:
  • White royal icing

Method

  1. Line a 18x28cm (7x11") baking tin with foil.
  2. Place the chocolate, butter and milk into a saucepan, heat gently until melted.
  3. Add the biscuits and raisins. Stir well. Press mixture into prepared tin and chill until firm. Cut into triangles and pipe three circles using the white royal icing over each.
  4. Using a cocktail stick drag from the centre to the edges of the circles to form a spider's web.
  5. Store in the refrigerator for up to 2 days.

Frankenstein fingers and sheep's eyes




For a frightening Halloween feast, kids will love these chunky Frankenstein fingers made with chunky carrots - perfect for dipping.

Ingredients

  • 1 tub guacamole, houmous or any other dip
  • 5 baby carrots
  • 4 large carrots
  • Stuffed green olives
  • Red grapes
  • Almond flakes
  • Sour cream

Method

  1. Fill a small bowl with ready-made guacamole, houmous or other favourite dip.
  2. Take 5 baby carrots and take a thin slice off the tip of each. Then use the knife to make a small incision at the base of this cut and push a flaked almond into the slot to look like finger nails!
  3. Arrange the carrots into the dip so they look like fingers.
  4. For the sheep's eyes, peel 4 carrots and thickly slice. Slice a few green stuffed olives and red grapes.
  5. Top each carrot slice with a blob of sour cream and the sliced grapes or olives. Arrange the eyes in pairs on a serving plate.

Green monster cupcakes




These scary monster cupcakes are perfect for Halloween or a little boys' birthday party. You can make or buy some basic cupcakes and then follow our icing instructions to create these scary little creatures.

Ingredients

12 cupcakes
  • 100 ml (3½ fl oz) syrup
  • 250 g (9 oz) ganache
  • 500 g (1 lb 2 oz) black icing (cupcakes)
  • 300 g (10½ oz) green icing (face)
  • 250 g (9 oz) white icing (eyes and teeth)
  • 50 g (1¾ oz) orange icing (eyes)
  • 100 g (3½ oz) red icing (lips)
  • Cornflour
For the ganache:
  • 1.2kg white chocolate, finely chopped
  • 450ml pure cream

Equipment:
  • Skewer
  • Pastry brush
  • Cranked palette knife
  • Large and small rolling pins
  • Circle cutter
  • Flexi-scraper
  • Small kitchen knife
  • Frilling tool
  • Paintbrushes

Method

  1. To make icing the cupcakes easier, once cooled you could 'ganache' (cover) them with the ganache mixture. To make the ganache, add the cream to a pan and bring to the boil. Then add in your chopped white chocolate and whisk together until smooth. Leave to cool and set overnight and then spread on top of your cupcakes with a palette knife.
  2.  Next, knead the black icing to a pliable dough and roll out to 3 mm (1/8 in) thick. Using a circle cutter in the same size as the cupcakes, cut out 12 circles and stick them on the cupcakes.
  3. Now you need to make the head: Roll out the green icing to 3 mm(1/8 in) thick and using a circle cutter cut a circle the same size as the cupcake. Use the same cutter and cut a half section out (step 1). Stick the remaining crescent moon shape on the cupcake with a little water; align with the icing at the rim.
  4. To make the lips: roll a strip of red icing (the width of the cupcake) and thin it out towards the ends. Stick the roll on the joining line between the black and the green icing. Trim at the sides.
  5. To make the teeth: Roll one-third of the white icing to 3 mm (1/8 in) thick. Cut a strip of 2 x 10 cm (3/4 in) with a clean knife. Cut a zigzag for the teeth. Stick five to six teeth straight below the red icing.
  6. To make the eyes: roll pieces of the remaining white icing into pea-size balls and stick two on each monster's head. Using a frilling tool, make a hole in the centre of each ball. Roll very small balls of the orange icing and stick those into the holes of the white icing with a little water.
  7. Now your cupcakes are ready to serve!

Bat and pumpkin cookies



Easy to make and a doddle to decorate, these spooky cookies are perfect for a Halloween treat.

100g (4oz) butter, softened
50g (2oz) caster sugar
150g (5oz) sifted plain flour
2.5ml (½ tsp) ground mixed spice

1. Place the softened butter in a bowl with the caster sugar and beat until pale and creamy. Stir in the sifted plain flour and ground mixed spice and mix to a stiff dough. Wrap in clingfilm and chill in the fridge for 30 mins.
2. Preheat oven to 180°C (350°F, gas mark 4). Roll out the dough on a lightly floured surface and stamp out about 10 bats and 8 pumpkins, re-rolling the dough as necessary. Place on a large lightly greased baking sheet and bake for 12-14 mins until pale golden. Cool on a wire rack.
3. Decorate the cold cookies with thinly rolled-out coloured fondant and attach with a little glacé icing. Pipe faces and eyes with icing or cut out faces with the tip of a small knife.

Creamy Halloween eyeballs



Your kids will love these fruity, creepy Halloween treats - which use lychees for eyeballs!.

Ingredients

  • 4 ripe plums
  • 4 ripe lychees
  • 1 pomegranate
  • Aerosol dairy cream (eg Anchor iScream)
  • Pomegranate juice, or similar red fruit juice

Method

  1. Take each plum and using an apple corer take out the plum stone.
  2. Peel the lychees and using a sharp knife cut the lychee fruit at one end and expose the stone (this will look like the pupil of the eyeball!)
  3. Fill the plums with cream, push the lychee into the top.
  4. Place on a dish and sprinkle with pomegranate seeds and spoon over some of the red juice to make the eyeballs blood shot!
  5. Serve straight away for a spooky desert.

Sausage and bacon broomsticks




Coated with runny honey and mustard, these skewered snacks go really well with tomato salsa.

Ingredients

  • 12 rashers rindless smoked streaky bacon
  • 12 thick pork sausages
  • 30ml (2tbsp) runny honey
  • 15ml (1tbsp) wholegrain mustard
  • Tomato salsa, to dip

Method

  1. Preheat the oven to 190°C, 375°F, gas mark 5. Stretch the bacon rashers, using the blunt side of a knife then wrap a rasher around each sausage and place in a shallow roasting tin. Cook for 15 mins, turning once.
  2. Mix together the honey and mustard, and brush all over the sausages. Return to the oven for a further 10-15 mins until cooked through. Cool for 5 mins, then thread on to 12 long wooden skewers and serve with tomato salsa.

Creamy orange pumpkins



Oranges make great mini Halloween pumpkins - and the kids will love helping to make these

Makes: 2

2 large oranges
¼ watermelon, peeled, seeds removed and scooped into balls
1 pomegranate, cut in half and seeds removed
6 black seedless grapes, halved
Aerosol dairy cream (eg Anchor iScream)

1. Take each orange and using a sharp knife cut the top off the orange.
2. Cut into and through the orange flesh, making two diamond shapes for eyes. Do a zig-zag to create the mouth and teeth.
3. Pull out the cut-out shapes and carefully scoop out the orange flesh (the flesh can be squeezed into a glass and drunk).
4. Stuff the orange with the fruit and fill up the rest of the orange with a huge squirt of cream.
5. Scatter with pomegranate seeds - and serve if you dare!

Ice 'scream' sundaes



So easy to make, these Halloween ice cream treats are perfect for kids.

Makes: 6
Takes: 10 mins

4 chocolate brownies
2 x 125g pots ready-made strawberry jelly
6 large scoops vanilla ice-cream
Selection of jelly sweet worms and bats

1. Cut the chocolate brownies into small pieces and divide between six small dishes.
2. Roughly chop the jelly and spoon into the dishes.
3. Top each with a scoop of ice-cream. Decorate the sundaes with the jelly worms and bats and serve immediately.

Spooky Halloween pizza




Add bat and pumpkin-shaped Edam slices to this homemade pizza for a deliciously scary Halloween feel.

Ingredients

  • 290g packet pizza base mix
  • 90ml (6tbsp) sun-dried tomato paste or tomato pizza topping
  • 10ml (2tsp) olive oil
  • 240g packet Edam cheese slices

Method

  1. Preheat the oven to 220°C/425°F/gas mark 7. Make up the pizza base mix according to the instructions and knead on a floured surface for 5 mins. Then, roll out thinly to a 23 x 35cm (9 x 14in) rectangle.
  2. Place on a baking sheet and spread over the sun-dried tomato paste or pizza topping. Drizzle over the olive oil and bake for 10 mins.
  3. Using cookie cutters, cut out pumpkin and bat shapes from the cheese slices. Remove the pizza from the oven and top with the cheese shapes. Return to the oven for a further 5-6 mins until the pizza base is crisp and the cheese has just melted.
