Thai Chicken Noodle Soup
 
YOU NEED:

1 3/4 pints chicken stock
1-2 medium chicken breasts, chopped into small pieces suitable for soup
1 thumb-sized piece of root ginger, grated or finely chopped
2-3 garlic cloves, finely chopped
1 tsp turmeric
2 tbsp crunchy peanut butter
1 can coconut milk
2 green chillis, chopped
thread egg noodles (a supermarket 10p packet is fine)
some chopped coriander, fresh or dried
2 tbsp cooking oil
 
FOR THE (optional) GARNISH:
 
2 red chillis
1 handful dessicated coconut
 
WHAT YOU DO:
 
1. Heat the cooking oil in a wok
2. Add the chicken, ginger, garlic, green chillis and turmeric and stir fry for a few minutes
3. Add the chicken stock, peanut butter and coconut milk
4. Bring to the boil and then simmer for 15 minutes
5. Add the noodles and coriander
6. Continue simmering for a few minutes until the noodles are cooked.
7. Serve (or do the garnish below THEN serve)
 
GARNISH:
 
1. Chop the red chillis and add to a frying pan with the coconut in a little cooking oil
2. Fry until the coconut turns brownish (only takes a few seconds)
3. Sprinkle with a spoon on top of the hot soup and watch it sizzle.

Nah I would probably prefer the stilton once I pluck up the courage, I prefer the stronger option in all things.

no it doesnt my brother wont touch stilton but loves this soup though you can substitute the stilton for a mature chedder

I'm quite scared of smelly ming mong cheese - I've only had stilton in a broccolli and stilton cup a soup and even then it was probably fake. Does it still taste of old socks when it's in the soup?

I love soups this is one of my faves

Potato, Leak and Stilton Soup

Ingredients

  • 25g butter
  • 2 medium (about 400g) leeks, washed and thinly sliced
  • 250g floury potatoes, such as maris piper
  • 1.2 litres  vegetable stock,  fresh or from cubes
  • 2 bay leaves
  • 100ml single cream
  • 125g rindless Stilton, crumbled

1. Melt the butter in a large saucepan. Add the leeks and cook for 5 minutes, stirring now and then, until softened but not browned.

2. Cut the potatoes into thick slices and add to the pan with the vegetable stock and bay leaves. Season to taste with salt and freshly ground white pepper. Cover with a lid, bring to the boil, then reduce the heat slightly. Simmer for 15 minutes or until the potatoes are very soft. Remove from the heat.

3. Stir the cream and Stilton into the hot soup, then discard the bay leaves. Blend with a stick blender (or in batches in a blender), until smooth. Taste and adjust the seasoning if necessary.



Cut this out of a magazine years ago and does make a lovely soup, I put some crumbled stilton and black pepper on top

I have a Butternut Squash Soup as well add that one later as well.

Sounds nice the Thai Chicken Soup.

Oh chicken's easy. One of the recipes I'm putting on later is for Thai chicken soup - only takes 20 mins to make.

Minestrone Soup
1 Onion
1 Carrott
Half a Cabbage
1 Courgette
Garlic
Spaghetti.
Tin Tomatos
2 Stock Cubes and Pint of Water
 
Chop all Veg and put into Pan add Stock Cubes and add some Italian Herbs simmer until the vegetables until softened. 
When Vegetables are softened add Spaghetti and Cook till softened. 
 
Then you can enjoy nice Hot Minestrone Soup.

Oh I love soup. I have a couple of recipes I'll shove on here when I get in from work. I always prefer making my own to eating stuff out of a tin, and a lot the carton soups are horrible (Covent Garden I'm looking at you).

I have been making some Soup recently, two batches in three days LOL

The first Soup which I made was Onion and Tomato Soup it was good.
 
1 and a Half Onion Finely Chopped
1 Clove of Garlic
2 Tins of Tomatos
Half Pint of Veg Stock. 
Half a Teaspoon of Cumin
Chilli Powder Optional
 
Chop Up Onion and Garlic cook till slightly softened.
Add Tins of Tomatoes and Stock stir
Then add the Cumin and Chilli stir and leave to simmer for an Hour and a half.
When cooked Blend with Blender if you got one.
