White Chocolate Cheesecake -

200g White Chocolate
2 oz Butter
14 Digestive Biscuits
200g Philadelphia Cheese
200g Mascapone Cheese
Double Cream (normal sized elmlea tub)

Crush up 14 digestive biscuits. Melt 2oz of butter and mix in with your digestive biscuits. Place on the bottom of your cake tin (preferably one with a loose bottom)

Whip your cream until stiff. Add into the cream your philly and mascapone cheese. (whilst doing this melt your chocolate and let it cool slightly).

Add your chocolate to your cheese and cream and mix together.

Place the mix on top of your biscuit base and put into the fridge to cool for 3-4 hours.

Dead Easy !!

(if ye want to be fancy, add on top of your cheesecake some rasberry coulis)

Delish....Enjoy xx

Sounds wonderful Vonsta, but sadly a little more fat than I could manage as I am having problems eating fats at the moment.
