I had 2 use the ounces bcause they were easy
For this you'll need:
2oz of golden caster sugar
4oz of plain flour
2oz of cornflour
6oz of butter (I'd use Kerrygold)
Chocolate chips (My special ingredient)
For the utensils you'll need:
Mixing bowl
Seive
Fork
Scales (obviously)
knife
Small cake tin
Cooling rack
Now the method:
1. Make sure your hands are washed.
2. Turn the oven on at 180.C.
3. Measure the flour and the corn flour to make 6oz, then seive it
through the bowl.
4. Add the sugar then, into the bowl.
5. Add the butter in then, use your hands to mix it together and keep doing it till it looks like breadcrumbs
6. Then add the chocolate chips and continue mixing it.
7. Then mash it into a dough and then flatten it into the cake tin.
8. Use the fork to make holes so it can get air inside the oven.
9. Place it inside the oven and leave it to bake for 30-35 minutes checking it once halfway through.
10. When finished, cut around the tin with a knife and then cut it into 8 triangle pieces and then leave it 2 cool on the rack.
And there you go chocolate chip shortbread!

You know that actually looks quite good (ie foolproof) plus even though it sems a shedload of butter, it IS Kerrygold

Will have to make some for Pez Jnr - he adores shortbread, and the addition of chocolate chips will make it seem like he's in heaven!

It's shortbread with a layer of caramel stuff on top and chocolate on top of that! (no fat or calories in it of course!)

So THAT'S what millionaire's shortbread is! We just call it caramel cake up here. Extremely fattening. The caramel is condensed milk (i.e. a can of sugar) boiled for an hour along with digestive biscuits crushed up with butter to make the base then chocolate on top. It's great but the sugar sends me loopy.

Lost a bit of weight when I was sick and I used to eat loads anyway (rush around and work out a lot so I burn it all off)
The shortbread is pure fat and sugar but I really want to have a bash at it, Jon can do biscuits (at least he did at school) but I've never made any |
